The kitchen leans on Japanese culinary principles: precise knife work, seasonal ingredients, presentation that's part of the meal.
The menu spans the full Japanese range. Makimono and temaki sushi rolls, nigiri straight from the case, salads from cucumber to nutty-fig, hibachi from the grill, sashimi in the Imperial Collection, plus carpaccio-style preparations for diners who want their fish raw and dressed.
